FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method envisages preparation of recipe components including fish and raw materials of vegetal origin, mince preparation, moulding, mealing in crumbs and heat treatment to produce cutlets. One prepares a sauce and packs the cutlets with the sauce into containers. Heat treatment of moulded cutlets is performed in an inert gas medium at a temperature of 160-165°C in an installation containing a convection oven connected to an inert gas source via a heat exchanger. Extracted broth is added into the sauce combined with lactulose and amber acid in an amount of 0.03-0.3% of the total volume of the sauce.
EFFECT: invention ensures indispensable amino acids and vitamins preservation.
