FIELD: food industry.
SUBSTANCE: invention relates to fat-and-oil industry. The solid fat contains in its triacylglycerol fraction at least 49.1% of triacylglycerols with total formula SUS, 32.5% - 74.3% triacylglycerols with total formula StOSt, 3.2% - 8.1% triacylglycerols with total formula AOSt and 3.3% - 10.3% triacylglycerols with total formula BOSt as well as 0 - 0.5% of linoleic acid. Fatty acids in glycerine positions sn-1 and sn-3 are the two external features in the triacylglycerol formula, S representing a saturated fatty acid, U - a non-saturated fatty acid, St - stearic acid, O - oleic acid, A - arachidonic acid and B - behenic acid. The solid fat is produced from high-stearic and high-oleic sunflower oil. The produced solid fat Is used for confectionary goods manufacture.
EFFECT: method allows to produce a solid fat of readily available raw material by way of increasing fat melting temperature and content of solid substances at such temperatures which allows to preserve confectionary goods properties.
