FIELD: food industry.
SUBSTANCE: liquid and stable oleic fraction where: a. less than 8.6% of triacylglycerides (TAGs) in the said oleic fraction particles have general formula SMS and b. at least 26% of TAGs n the said oleic fraction particles have general formula SMM where S means a saturated fatty acid and M means a monoenoic fatty acid; the oleic fraction is generated by way of fractionation of highly saturated sunflower oil with a high content of olein and liquid fraction collection.
EFFECT: invention enables production of an oleic fraction that possesses grade oxidation stability, is liquid at temperatures approximately equal to or below zero and has a triacylglyceride composition that renders it healthful.
