SUBSTANCE: invention relates to fat-and-oil industry. Non-temper, texture-providing composition of fats, contains 10-65 wt % of one or several vegetable fats, has melt point not higher than 25°C, and 35-90 wt % of one or several vegetable fats with melt point higher than 25°C. In said vegetable fats, at least, 90 wt % of chains of constituting fatty acids are longer than C12, ratio C16:0/C18:0-C24:0 is not larger than 4 and ratio SSU/SUS constitutes, at least, 1, and where, in said composition content of triglycerides of S3 type constitutes, at least, 0.5 wt %, where group S stands for identical or different saturated fatty acids, and group U stands for identical or different unsaturated fatty acids. Method includes obtaining vegetable oil and vegetable fat, mixing them at temperature higher than melt point of vegetable fat and cooling mixture to the environment temperature.
EFFECT: invention makes it possible to provide texture with similar or higher quality in comparison with known fats, as well as with the same low content of saturated fatty acids.
