FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method for production of a waffle sheet (containing multiple semi-shells, having a ring-shaped hole rim with a finished surface and connected to one another via the connective wall) envisages: the said dough moulding and baking with usage of a mould formed by two complementary plates having corresponding front surfaces that, as a result of connection of two plates, may form a moulding cavity having a shape wherein the front moulding surface of at least one of the said plates has profile sections projecting towards the front surface of the other plate and forming a cut-out in the dough in the connective wall. The plates are connected together in the initial position where the moulding cavity has a volume less than that of the produced waffle sheet. Dough is subjected to the first stage of partial baking till dough is partly hardened; then dough is subjected to final baking with the moulding cavity volume increase to produce a waffle sheet.
