FIELD: chemistry.
SUBSTANCE: invention relates to method of obtaining ajoene, which includes: stage of heating allicin-containing acidic solution for sufficient period of time in such a way that at least part of allicin is converted into ajoene, with temperature during heating stage being sufficient to cause conversion of allicin into ajoene, sufficient period constitutes from 1 to 10 hours; as well as to methods of obtaining allicin and to method of concentrating allicin by freezing.
EFFECT: method improvement.
