FIELD: medicine.
SUBSTANCE: invention relates to device for removal of inter-muscular bones from fish. Device contains kinematic chain and rotating head (30) of cylinder, connected to kinematic chain. Device contains restrictor (52) of torque which disconnects rotating head (30) of cylinder from kinematic chain at specified value of torque. Also claimed is method for removal of inter-muscular bones from fish fillet, including jamming respective inter-muscular bone between rotating cylinder with deepenings and resilient lug, contacting with cylinder. During jam pulling effort is applied to inter-muscular bone of fish until effort reaches preliminarily specified level, at which pulling is interrupted for a short period of time except cases when inter-muscular bone is removed immediately. If bone is not separated, pulling effort is applied again until it reaches preliminarily specified level, with the process being repeated until bone is not separated.
EFFECT: invention considerably reduces risk of breaking inter-muscular bones in the process of their removal from fillet.
