SUBSTANCE: device includes at least one profiled roller unit (10) installed with possibility of rotation and containing support element (11) located opposite, which forms clamping gap (12). Roller unit (10) and supporting element (11) are configured to grip the intermusical bones in clamping gap (12) and remove these bones from the fish fillet. Roller block (10) comprises inner space (15), in which drive unit (16) is arranged, which is made with possibility to actuate roller unit (10) with provision of its rotary movement.
EFFECT: invention provides a compact and reliable device for removal of intermuscular bones of fish fillet.
