FIELD: food industry.
SUBSTANCE: inventions group relates to food industry. The foamed tea beverage is prepared of a combination of water and a powdered tea composition containing at least 0.7 wt % of tea extract powder and at least 1 wt % of a food acid. The beverage consists of a mixture of liquid and bubbles and a cap of foam on top of the mixture of liquid and bubbles with the average size of foam bubbles being less than 100 mcm; the beverage contains no whitener, fat or thickener. Capsule for application in a beverage preparation machine where the said machine contains a receptacle for accommodation of the said capsule and a liquid injection system for injecting liquid, preferably - water under pressure into the said capsule. The capsule contents include a combination of powdered tea composition. The foamed tea beverage preparation method is implemented through injecting liquid under pressure into the capsule that contains a powdered tea composition. The capsule includes a cavity containing a substance and a structure for dispensing the ready beverage adapted for maintenance of a specific extraction pressure in the cavity up to the moment of the ready beverage dispensing from the capsule.
EFFECT: inventions group ensures production of a foamed beverage with a stable/steady foam and a creamy texture.
