FIELD: food industry.
SUBSTANCE: proposed creamer composition for food or beverage contains lipids. While from 0.1 to 15% by weight of lipids are polar lipids. Moreover, polar lipids contain a glycolipid obtained from oats. Polar lipids are derived from oats and are oils from oats. Oils obtained from oats are obtained by low-temperature distillation in a hard vacuum. A ready-to-drink or ready-to-use drink containing a drink creamer, the use of a polar lipid containing an oat-derived glycolipid as an emulsifier in a food or drink creamer composition, and a method for producing a food or drink creamer composition.
EFFECT: absence of odour or dark colour and the stabilization of creamer emulsions without the addition of buffer agents, protein emulsifiers or synthetic emulsifiers.
