FIELD: food industry.
SUBSTANCE: invention relates to dairy industry, in particular, to a method for treatment of dairy products by way of membrane filtration and to a membrane filtration unit for the method implementation. The method involves supply of a dairy product into the levelling reservoir, its membrane filtration with formation of a permeate and a retentate fraction, the permeate fraction cooling to a temperature below that of the retentate fraction; prior to filtration, the product is heated to 50-65°C; the retentate fraction is maintained at 50-65°C during membrane filtration while the temperature of the permeate fraction during membrane filtration is maintained within the range of 0-64°C.
EFFECT: method provides for considerable reduction/prevention of sediment formation on the membrane without considerable reduction of flow through the membrane module.
