FIELD: chemistry.
SUBSTANCE: invention relates to biotechnology and represents novel enzyme asparaginase, obtained from Basidiomycete. Invention also relates to method of hydrolysis of one of L-asparagine or L-glutamine, including processing of substrate, which contains one of L-asparagine or L-glutamine, with asparaginase enzyme. Invention also relates to method of reducing formation of acrylamide in L-asparagine-containing food substance, including application of asparaginase enzyme on L-asparagine-containing food substance and heating L-asparagine-containing substance.
EFFECT: invention makes it possible to extend arsenal of enzymes, belonging to asparaginases, as well as to reduce formation of carcinogenic acrylamide in thermally processed food.
