FIELD: food industry.
SUBSTANCE: invention relates to food industry. The proposed method for production of puree for dietary alimentation involves girasol tubers preparation, milling, mixing with fruit raw materials, the mixture treatment in UHF electromagnetic field, straining, homogenisation, deaeration, heating, packing, closuring and sterilisation. The fruit raw materials are represented by coarsely milled apples or coarsely milled bananas or coarsely milled quinces or coarsely milled pears. The vegetable puree is represented by pumpkin puree or carrot puree or a mixture of potato puree and carrot puree or a mixture of potato puree and pumpkin puree, the mixture components ratio being (1:1)÷(1:2). The vegetable puree is added at the stage of homogenisation at the preset components ratio.
EFFECT: such method allows to obtain dietary food with a high physiological value.
