FIELD: canning industry.
SUBSTANCE: invention relates to the canning industry and can be used in the production of juice drinks. A juice-containing vegetable drink with antioxidant action is proposed, which is made from tomato juice, Jerusalem artichoke puree, obtained by preparing Jerusalem artichoke tubers, their coarse grinding, processing the crushed raw materials in an electromagnetic field of microwave frequencies in two stages, subsequent rubbing and homogenization, salt and drinking water, and extract obtained by extracting with water a crushed mixture of blueberry leaves and black walnut leaves at a ratio of blueberry leaves and black walnut leaves (40:60)÷(50:50) and a mixture-to-water ratio (1:7)÷(1 :9) in the zone of ultrasonic exposure with a power of 160-200 W for 5-7 minutes at a temperature of 32-34°C and subsequent filtration, with the following ratio of initial components, wt.%: tomato juice - 20-25; Jerusalem artichoke puree - 15-20; extract - 20-25; salt - 0.5-0.7; drinking water - the rest.
EFFECT: invention makes it possible to obtain a juice-containing vegetable drink with high antioxidant activity.
