FIELD: food industry.
SUBSTANCE: butter maker contains a stationary vertical cylindrical vessel with a lid where, along its axis, a beating mechanism containing a shaft and two spiral screws are installed, with various diameters and varied spiral winding pitch; such screw ends are attached to the shaft. The shaft is equipped with blades designed in the form of rectangular semi-helicoidal plates and installed with equal pitch along the helical line perpendicular to the shaft axis. The spiral screws are sequentially attached to the blade ends. The minor diameter helical screw is installed inside the major diameter helical screw. The spiral screw winding is oppositely directed. Baffle plates are installed along the vessel walls at an angle relative to the vertical. A spiral screw drive is installed in the lid. The vessel bottom is equipped with a support for the shaft lower end placement.
EFFECT: invention allows to reduce the device energy intensity and accelerate the butter beating process due to creation of multiple multidirectional cream flows moving at varied rates.
