FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to devices for production of butter from cream b way of churning. The batch butter maker contains a cylindrical horizontally positioned vessel that is capable of turning by 180° relative to its axis from the operational position to the butter discharge position and backwards along the positioned on the frame and the vessel; located between the latter are rollers attached with the help of fixtures; the churning mechanism is positioned eccentrically relative to the vessel axis and is designed in the shape of a hollow rotor for supply of gas; the rotor cross section has a closed sinusoidal profile the medial line whereof is a circle with at least 5 holes made along the rotor profile at an angle α=30°…70° relative to the rotor crosswise axis; additionally, the butter maker contains a discharge auger with uniformly decreasing number of coils in the butter discharge direction, the auger fixed in the discharge channel and installed at an angle β=5°…15° on the opposite side of the vessel relative to the churning mechanism. On the side surface of the vessel, over its axis, a charging hatch is installed made of transparent material with a view of controlling the churning process as well as for supply of cream before churning and for supply of water before butter washing. For supply of gas a delivery pipeline is installed in the butter maker. Removal of gas excess from the vessel is performed with the help of an outlet valve. The butter maker is set into operation with the help of a control device and corresponding drives. Installed in the vessel lower part is a tap for butter milk draining in the butter maker operational position.
EFFECT: invention ensures reduction of butter churning energy intensity and discharge labour intensity, enabling discharge of butter without use of water.
