FIELD: food industry.
SUBSTANCE: invention refers to food industry, in particular - to a dough kneading device. The kneading device (2) has a kneading chamber (6) that is limited by a wall (4) at least at spots, the chamber having a discharging hole (8) for discharging kneaded dough from the kneading chamber (6) and a charging zone (10) for charging dough to be kneaded into the kneading chamber (6). The kneading device has at least two shafts (12, 14) whereon the tools (18, 22) are mounted, positioned inside the kneading chamber (6). At least one of the tools (18, 22) is designed so that to transport dough from the charging zone (10) in the direction of delivery (20) to the charging hole (8). The rotation frequencies of the both motor-actuated shafts (12, 14) are set and adjusted independently from each other with the help of the control device (16). The both shafts (12, 14) are equipped with tools (18, 22) so that the action of delivery of the set of instruments (22) of the first shaft (12) in the form of a volume flow of dough (6) located in the kneading chamber in the delivery direction (20) and/or the kneading action of the set of tools (22) of the first shaft (12) in the form of a volume flow of dough (6) located in the kneading chamber in the direction of the other tool (14) instruments (18) are different from the delivery and/or kneading action of the second shaft (14) tools (18) at accordingly equal rotation rate of the shafts (12, 14). The first shaft (12) and the tools (22) mounted thereon are positioned inside an imaginary cylindrical housing (24) whereon the inner edges (26) of the tools (18) mounted on the second shaft (14) (such edges turned towards the first shaft (12)) move during rotation round the second shaft (14) axis (28).
EFFECT: invention implementation will allow to enhance the resultant product quality.
