FIELD: chemistry.
SUBSTANCE: group of inventions relates to protein substrate hydrolysate, method of its obtaining and food product, which contains claimed hydrolysate. Claimed protein substrate hydrolysate is obtained by hydrolysis of substrate, which contains at least one non-lactic animal protein, by food quality bacteria, which are Bacillus natto, in medium with content of salt not less than 2 wt %. Method of hydrolysate obtaining includes mixing of substrate, which contains at least one non-lactic animal protein with Bacillus natto and incubation of obtained mixture for from 8 to 48 h, preferably from 15 to 25 h, at 45-65°C, in medium with content of salt less than 2 wt %.
EFFECT: hydrolysate has improved taste, aroma, texture and nutritional value and can be applied or subjected to additional processing to obtain food product.
