FIELD: agriculture.

SUBSTANCE: liquefaction of grain protein, which comprises at least gluten, the method is performed as follows. Provide an aqueous composition containing at least one cereal protein which is a fresh native wheat gluten, which is a product of the standard process of separation of starch and gluten having a solids content of 5 to 40 wt %. Added to an aqueous composition one or more hydrolytic enzymes and/or processing aids. Pretreated aqueous composition and homogenized in dynamic stirring using equipment having at least one rotor, rotating at a circumferential speed of 1 m/s to 100 m/s, preferably from 5 m/s to 20 m/s. The process is carried out in a continuous plug flow reactor. To obtain the hydrolyzed protein the liquefaction protein is carried. Preprocessing is then performed by heating the composition by direct steam injection. The composition is incubated at a temperature from 50 to 85°C for at least 5 minutes.

EFFECT: obtained hydrolyzed protein is used in foods and animal feeds.
