FIELD: food industry.
SUBSTANCE: invention relates to food industry. The emulsion contains the polyethylenglycol of a fat-soluble vitamin emulsifier derivative, a disperse phase containing one ore more polyunsaturated fatty acids or their derivatives, water, a co-solvent, monosaccharide, disaccharide or their mixture. The ratio of the emulsifier to the disperse phase is equal to 1.5 or less. The total quantity of water and the co-solvent is equal to 43% or less. The obtained emulsion is used for beverage production.
EFFECT: invention allows to obtain a transparent or a semi-transparent emulsion in the process of dilution.
