FIELD: food industry.
SUBSTANCE: invention relates to the production of dietary preventive nutrition products. Functional food product is an emulsion in water of transesterified and non-esterified vegetable oils and/or fractions thereof that do not contain trans-isomers of unsaturated fatty acids. Content of polyunsaturated fatty acids is at least 15 % of the total amount of fatty acids, including omega-3 fatty acids, not less than 1 % of the total amount of fatty acids, the content of tocopherols and tocotrienols is not less than 0.015 %. Source of omega-3 fatty acids ensures their content in the functional product is not less than 0.4 g/100 g, including the total content of eicosapentaenoic and docosahexaenoic acids is not less than 0.1 g/100 g. Food product also contains a mixture of antioxidant vitamins, consisting of ascorbic acid, α-tocopherol and/or α-tocopherol acetate and phytoalexin in the ratio (1–60):(1–3.5):(1–20), with a total mixture content of at least 5 mg per 100 kcal of product.
EFFECT: invention makes it possible to teach a functional food for the prevention of cardiovascular diseases.
