FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Method for preparation of food product - seasoning, comprising a step for fermentation in solid state, a step for hydrolysis and a step for thermal reaction, where said step for fermentation in solid state, step for hydrolysis and step for thermal reaction are carried out in same reaction vessel. Apparatus for preparation of a food product comprises: reaction vessel with loading hole capable of opening and closing for input of reaction materials, and a steam inlet hole capable of opening and closing for introduction of steam into vessel, grinding assembly for grinding reaction materials after fermentation, mixer, located inside reaction vessel, a sealing device for sealing reaction vessel, gas outlet hole for discharge of gases from reaction vessel and pressure control in a reaction vessel, outlet hole, device for temperature control and device for measuring temperature and/or moisture content.
EFFECT: invention allows to preserve important volatile components, reduces time and labor costs, and improves sterility of product.
