FIELD: food industry.
SUBSTANCE: invention relates to food industry. Composition in a form of gel for food product preparation, containing water, flavouring agents, salt and gelling agents, where gelling agents contain at least low methoxyl pectin, preferably amidated low methoxyl pectin, and calcium ions. Method of preparing the composition includes the stages: mixing of jellying agents, heating to temperature of at least 75 °C, adding a calcium source together with salt and flavouring agents, and mixing, heating to temperature of at least 75 °C, for pasteurisation, filling into container and cooling to room temperature for at least 30 minutes until jellification.
EFFECT: obtained composition is used to prepare food products.
