FIELD: food industry.

SUBSTANCE: invention relates to a method for purification of rebaudioside A composition having low purity and can be used in food industry. Disclosed method involves mixing composition of rebaudioside A, having low purity, and an organic solvent consisting of ethanol and water to form a rebaudioside A solution with low purity, where rebaudioside A composition with low purity contains rebaudioside A in amount of 15 wt% to 60 wt% in terms of dry substance weight and one or more other steviol glycosides, selected from a group consisting of rebaudioside B, rebaudioside C, rebaudioside D, rebaudioside E, rebaudioside F, stevioside, dulcoside A, rubusoside and steviolbioside, and organic solvent contains water in amount of 5 wt% to 10 wt%; heating low-purity rebaudioside A solution to temperature within range from 20 to 40 °C; cooling low-purity rebaudioside A solution; seed introduction in solution by adding essentially pure rebaudioside A crystals; and single-stage crystallisation of low-purity rebaudioside A solution with essentially pure steviol glycosides mixture including rebaudioside A and one or more other steviol glycosides, selected from a group consisting of rebaudioside B, rebaudioside C, rebaudioside D, rebaudioside E, rebaudioside F, stevioside, dulcoside A, rubusoside and steviolbioside, where rebaudioside A is contained in substantially pure mixture of steviol glycosides in an amount of more than 95 wt% in terms of dry substance weight, and where mass output of rebaudioside A is equal to 20 wt% or more, and mass output steviol glycosides is 25 wt% or more.

EFFECT: novel efficient method of cleaning composition containing a natural sweetener.
