FIELD: food industry.

SUBSTANCE: disclosed is a method of producing a more than very weakly soluble steviol glycoside composition, comprising steps of producing a very poorly soluble powdered steviol glycoside composition, containing at least rebaudioside M, or rebaudioside D, or a combination thereof; mixing the powder composition, containing at least one steviol glycoside, with 50 % (v/v) aqueous solution of ethanol, to obtain a mixture; increasing the temperature of the mixture to obtain a solution; mixing the solution with pure ethanol; reducing the temperature of the mixture to obtain a colloidal suspension; separating the solid phase of the colloidal suspension, and drying the separated solid phase to obtain a more than very weakly soluble steviol glycoside composition. Also disclosed is a powdered more than very slightly soluble composition of steviol glycoside.

EFFECT: invention enables to obtain a more than very slightly soluble composition of steviol glycoside.
