FIELD: chemistry.

SUBSTANCE: invention relates to food industry. The method of purifying polymorphous or amorphous forms of rebaudioside A involves merging crude rebaudioside A and an aqueous organic solvent to form a rebaudioside A solution. The aqueous organic solvent contains water in amount ranging from approximately 10% to approximately 25% wt/wt and at least two organic solvents. Further, the rebaudioside A solution is heated at temperature ranging from room temperature to 50°C or from 50°C to 80°C, or at refluxing temperature. A composition of essentially pure rebaudioside A is crystallised from the rebaudioside A solution, said composition having purity higher than 95% wt/wt based on the dry mass. The solvated form of rebaudioside A is obtained by heating at temperature ranging from room temperature to 50°C. The hydrated form of rebaudioside A is obtained by heating at temperature ranging from 50°C to 80°C. The amorphous form of rebaudioside A is obtained by heating at refluxing temperature.

EFFECT: invention enables to obtain essentially pure rebaudioside A with high degree of purity, as well as its polymorphous and amorphous forms using a simple method without using special equipment.
