FIELD: food industry.
SUBSTANCE: invention relates to food industry. Oven for producing preferably crunchy brittle bakery products, wherein the oven has a front part of the furnace, a rear of the oven, housing with an external thermal insulation, a arranged inside the thermal insulation baking chamber and an endless baking tong chain continuously circulating and moving through the baking chamber disposed along a self-contained orbit which extends in two superimposed transport levels by both furnace parts. Baking tong chain contains up and foldaway and lockable closed baking tongs in which existing bakeware is arranged in brick form shells and baking-mold parts, which are opened by opening the baking tongs and closed by closing the baking tongs. There is a device for unlocking the baking tongs in the front part of the oven furnace on the orbit, and along the upper transport level means for opening the baking tongs, a dispensing station, a filling station and means for collapsing the baking tongs and a means for locking the baking plates are arranged in the running direction of the baking tongs succession, at the dispensing station there is a product removal device, which removes the baked products from the opened baking tongs it is downstream of an upper transport device for the harvested, baked products. Product removal device has a horizontal arranged about a horizontal axis of rotation rotatable cage that protrudes into the unfolded baking tongs, that the bogie carries along its outer periphery arranged acceptance elements on the outer periphery of the rotary frame in at least one along the circumference of the bogie extending longitudinal row are successively arranged, and that the loss elements are formed as connected to a vacuum source suckers, at that, the oppositely disposed bogie is arranged height-adjustable in the front part of the furnace. Furthermore, the horizontally disposed bogie has at its outer periphery outwardly projecting drive lugs which engage in the baking tong chain in the arranged between the baking tongs interstices of the baking tong chain.
EFFECT: invention enables improving a device for baking.
