FIELD: bread baking.
SUBSTANCE: invention relates to a back plate apparatus, in particular wafer tongs, ovens, and a method for manufacturing a shaped waffle body. Shaped waffle body (2), in particular, a baked intermediate product, comprises a baking mass which is baked under pressure and which contains, in the non-baked state, 55-70% of water, comprising baking product (20) having thickness (21) which is surrounded by baking connection (19), wherein baking connection (19) comprises at least one rib (22) which extends up to the edge of baking product (20). Baking plate apparatus, in particular, baking tongs, has a pair of baking plates, a moving device via which the first baking plate is openablely and closablely coupled to the second baking plate, and a locking device for locking the first baking plate with the second baking plate in the closed position. In the closed position, a baking tin is formed by the first jaw surface and the second jaw surface. Baking tin comprises a product chamber having a product thickness, which is surrounded by a gap portion with a gap thickness smaller than the product thickness. In addition, at least one channel is provided for discharging vapour which passes through the gap portion, wherein the channel thickness is greater than the gap thickness.
EFFECT: invention provides a baked product with a smooth closed surface and, moreover, having an internal structure with considerable porosity, and which can be made in conventional wafer tongs, in which the waste to be separated is substantially minimized.
