FIELD: baking industry. SUBSTANCE: open and shut pans are composed of stackable blocks of baking sheets carrying on their upper sides lower halves and on lower sides upper halves for baking products. Baking shaft positioned above lower loading position, at which basic product is placed on upper sides of each block of baking sheets, comprises blocks of sheets adjoining to one another and vertical stack resting upon lower holder. Said stack is continuously formed anew at its lower end through stacking device by continuously adding one block of baking sheets loaded with basic product and by continuously separating at its upper end through removal of one block of baking sheets. So blocks of baking sheets freely adjoining to one another and pans defined by stacked blocks of baking sheets are gradually moving upward through baking shaft while basic product is baked in pans into thin-walled formed products. Each individual pan defined by two blocks of baking sheets adjoining to one another is maintained in closed position despite internal pressure developed during baking by weight of part of stack lying thereon, while it is gradually movable in stack upward towards removal position, at which baked formed products are removed from upper side of block of baking sheets.
