FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to production of flour confectionery products. Functional purpose waffle product includes flour mixture, yolks, sodium bicarbonate, phosphatides, salt, and water. Flour mixture contains wheat flour and banana flour, taken in ratio 3:1, additionally contains a flavoring additive in form of feijoa and persimmon cryo-powders mixture in ratio 4:1, and conditioner Polisom-F in amount of 2 % by weight of flour mixture. Waffle product is made with following ratio of initial mixture components, wt.%: wheat flour and banana flour mixture 60.0-70.0, feijoa and persimmon cryo-powders mixture 12.5-13.7, phosphatides 0.4-0.6, yolks 10.3-12.6, sodium bicarbonate 0.3-0.5, conditioner Polisom-F 1.2-1.4, salt 0.3-0.5, and water as per calculation.
EFFECT: invention allows to manufacture product having uniform porosity structure, to increase nutritive value of product, enhance product stability, as well as prolong its storage life.
