FIELD: food industry.
SUBSTANCE: invention relates to food industry and can be used for determining quality of poultry meat. Method comprises preparing a sample, obtaining a colour image from surface of sample, processing colour characteristics of image on a computer and obtaining numerical values of optical characteristics, which are judged based on quality indicators of meat. Surface of sample is illuminated with a source with uniform light flux in pulsed and continuous modes. Colour image of background and surface of meat is then converted to digital format using a digital camera. Meat quality is determined from average dominant wavelengths, calculated for each pixel or a set of pixels of analysed digital photograph section or whole surface of analysed sample using locus of colours. Range of informative dominant waves is set in range of 685 to 585 nm.
EFFECT: invention enables to determine duration of storage of frozen poultry meat.
