FIELD: system for heating and cooling.
SUBSTANCE: invention relates to methods and devices for heating and cooling of viscous materials, such as mincemeat emulsion, used for production of food and other products. Device is a heat exchanger, containing first plate and second plate connected with it, as well as first and second spacers located between first and second plates. First plate, second plate, first spacer and second spacer form at least one channel with controlled temperature, intended for passage of product through heat exchanger.
EFFECT: reduced possibility of heat exchanger channels clogging.
