FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to a method for producing watermelon honey - nardek. The method includes evaporating ripe watermelon juice in vacuum evaporator at the working steam pressure of 0.4 MPa, the working vacuum in the housing of 0.03 MPa and the temperature of 70°C for 2.5-3.0 hours until the dry substance content is equal to 70-75%.
EFFECT: obtaining nardek with maximum preservation of the native characteristics of the feedstock with the simultaneous reduction of the time and electric power cost.
