FIELD: food industry.
SUBSTANCE: method for the production of a sugar-comprising product is proposed, according to which a fraction with a crystal size of 0.2-0.3 mm is sifted out of sugar, whereas watermelon honey taken in amounts of 2:1, comprising 60% sucrose, and stevia herb extract with a concentration of 50-60% of solids are used as a sweetener, which is introduced into screened crystals in the amount of 4.5-6.7% by weight of sugar crystals and mixed. Water is introduced into the resulting mass in an amount of 0.5-0.8% by weight of sugar and brought to a content in the mixture of 97.0-97.5% of solids, after which it is pressed into pieces of sugar and dried to a moisture content of 0.20 -0.25%.
EFFECT: improved quality characteristics and higher nutritional value.
