FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to the confectionery, namely to the compositions for the production of dietary jelly. Dietary jelly is proposed, which includes a structure-forming agent in the form of gelatin, food acid and a liquid base in the form of juice of berries, as a structurant, it additionally contains apricot gum, as a biologically active component contains an extract of fruits of burdock, as food acid contains ascorbic acid, and as a juice of berries use syrup made of watermelon juice by separating its flesh from the rind, following rubbing, straining, filtering, boiling and evaporation 7-8 times to a solids content of 70–75 %, with the following ratio of the starting components in the mixture, %: gelatin 5–12; apricot gum 6–9; burdock fruit extract 3–5; thickened watermelon juice 52–58; ascorbic acid 0.4–0.6; water – the rest up to 100 %. In this case, burdock fruit extract is prepared by burdock fruit extracting with water, followed by thickening to 1/30 of its volume.
EFFECT: invention provides an increase in the nutritional value of the product, a decrease in sugar intake, and an increase in dietary properties.
