FIELD: food industry.
SUBSTANCE: sweet potato tubers are washed, boiled, peeled and grated in the grating machine. A flat cake is moulded from mashed sweet potatoes. A hard kind of cheese is grated in the grating machine. A ball is formed from the grated cheese. A cheese ball is placed in the middle of the sweet potato cake. Then the semi-finished product is shaped like a ball, which is rolled in flour, dipped in egg, breaded in breadcrumbs and deep-fried at 180°C for 5-6 minutes till obtaining the finished croquettes. The croquettes are made at the following ratio, weight parts: boiled sweet potato 25; hard kind of cheese 5; egg 1; flour 1; breadcrumbs 2. The weight of the semi-finished product is 34, the yield of the finished product is 30.
EFFECT: invention allows to expand the assortment of culinary products having functional properties.
