FIELD: food industry.
SUBSTANCE: sweet potato tubers are washed, boiled, peeled and grated in the grating machine. From the grated mass, a flat cake is moulded, in the middle of which washed and dried cranberry berries are laid. Then the semi-finished product is shaped like a ball, which is rolled in flour, dipped in egg, breaded in breadcrumbs and deep-fried at 180°C for 5-6 minutes till obtaining the finished croquettes. Wherein the croquettes are prepared at the following ratio of weight parts: boiled potato tubers - 25, cranberries - 5, egg - 1, flour - 1, breadcrumbs - 2, the weight of semi-finished product - 34, the yield of finished product - 30.
EFFECT: invention allows to obtain a finished product having functional properties and having high taste and consumer properties.
