FIELD: food industry.
SUBSTANCE: aerated ice-containing product, suitable for obtaining by means of mixing at the weight ratio from 3:7 to 1:1 of the phases A and B. Phase A contains ice particles with frozen confectionery ingredients containing at least 1, preferably at least 5 wt % of skimmed milk solids (MSNF) and at least 1, preferably at least 3 wt % of fat and having at -18°C the average particle size from 30 microns to 60 microns, preferably 40 microns to 50 microns. Phase B contains ice particles, which are grown from aqueous sugar solution containing less than 1 wt % of MSNF and less than 1 wt % of fat and having at -18°C an average particle size between 100 microns and 400 microns, preferably between 150 microns and 300 microns. Another version of the aerated ice-containing product is proposed as well.
EFFECT: invention allows to obtain an aerated ice-containing product having the improved structure and flavour characteristics and suitable for drinking through a straw.
