FIELD: food industry.
SUBSTANCE: obtaining a hydrolysate from oil meals or oilcakes of an oil raw material with the concentration of dry substances up to 40%, namely sunflower, soybean, rapeseed, flax, or technical hemp. The method is implemented as follows. The raw material is extruded at a humidity of processed material of 10-30% and a temperature of 90-180°C, followed by water-enzymatic treatment of the extrudate with the solution of hydrolytic enzyme preparations of proteolytic action and/or cellulolytic action and/or alpha-galactosidase action in the hydrolytic chamber. The chamber is connected to the cooking chamber of the extruder, wherein the water input in an amount not less than 50% of the required mass is carried into the area of extrudate output from the cooking chamber of the extruder. The rest of the water in the solution with the enzyme preparation is fed into the hydrolytic chamber through a branch pipe located at a distance of 1 to 5 diameters of the hydrolytic chamber, counting from the area of extrudate output from the cooking chamber of the extruder.
EFFECT: invention is aimed at intensifying the process of hydrolysis of oil meals and oilcakes directly after extrusion in a hydrolytic chamber, using thermolabile enzyme preparations and simplifying the machine-hardware design of the process.
