FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Method of the preparation of a hydrolyzate from a starch-containing material is proposed, it comprises feeding the raw material to a cooking chamber of an extruder, with the subsequent transfer of the extrudate to the hydrolytic chamber of the extruder, for performing the enzymatic hydrolysis, at the end of which the hydrolyzate is taken to the receiving tank to complete the hydrolysis process. At the same time, raw materials are used with a moisture content of 11–15 %, and the process is carried out with a specific mechanical energy of extrusion from 570 to 650 kJ/kg.
EFFECT: method provides reduction of raw material losses and increase in yield of the finished product.
