FIELD: food industry.
SUBSTANCE: method for flavoured algae preparation includes the following steps: (1) frying of the dried algae in a tunnel fryer at a temperature of 50 to 200°C for 2-3 seconds; (2) application of oil to the surface of the algae obtained as a result of step (1) and adding salt to the algae treated with oil; (3) additional frying of flavoured algae resulting from step (2) in a tunnel fryer at a temperature of 200 to 400°C for 5-7 seconds; (4) oil spraying and application to the surface of the algae resulting from step (3).
EFFECT: method for preparation of flavoured algae allows to increase the organoleptic properties of the finished product.
