SUBSTANCE: method of instant coffee treatment includes providing instant coffee powder, providing coffee oil in an amount of 0.5 to 4 wt % with respect to the powder of instant coffee and providing water in an amount of 1 to 3 wt % with respect to the instant coffee powder. The instant coffee powder is mixed with coffee oil, and then with water to provide instant coffee with treated surface texture. A method for producing a beverage includes contacting the instant coffee powder with an aqueous medium.
EFFECT: obtaining a product with improved odour, texture, colour and fluidity.
