SUBSTANCE: group of inventions refers to a plant for producing sausage products, such as sausages, comprising a component for braking of the membrane shell. Component for braking (100) to apply a frictional force to a tubular or bag-like packaging membrane shell (M) put on filling tube (10) of production plant (CM), such as a clipper for manufacturing, which is used to produce sausage products (S) and to restrict the movement of the tubular or bag-like packaging membrane shell (M) at least during packing. Component for braking (100) comprises tubular support means (110), onto which at least one braking element (120) rests having at least an approximately annular structure. Component for braking (100) further comprises tubular sleeve (130) for receiving tubular support means (110) and at least one braking element (120), fastening device (150) including at least an approximately tubular receiving portion (160) for receiving tubular sleeve (130), and at least one fastening portion (170) for securing component for braking (100) to production plant (CM). Plant (CM) for producing sausage products (S) includes mounting device (200) for reversibly mounting component for braking (100) of the membrane shell thereon and component for braking (100) of the membrane shell to apply a frictional force to the tubular or bag-shaped packaging membrane shell (M) during its packing.
