SUBSTANCE: method comprises contacting a terpene of formula I:

where R is a saturated, monounsaturated or polyunsaturated aliphatic group consisting of 9 carbon atoms, and where R can be a branched chain or consists of a non-aromatic ring, with a polypeptide having P450 monooxygenase activity and comprising an amino acid sequence identical to at least 90% of the sequence SEQ ID NO:71 or SEQ ID NO:73. Also disclosed are an isolated polypeptide having P450 monooxygenase activity containing an amino acid sequence identical to at least 90%, 95% or 98% or more with a sequence SEQ ID NO:71 or SEQ ID NO:73, an isolated nucleic acid molecule encoding said polypeptide and an expression vector for producing a polypeptide having P450 monooxygenase activity.
