FIELD: sugar industry.
SUBSTANCE: invention relates to the sugar industry. A method for the production of crystalline white sugar is proposed, which provides for the production of diffusion juice, purification, evaporation, filtration, boiling of the first crystallization massecuite in the first vacuum apparatus, the selection of a part of the massecuite and feeding it into the second apparatus, the descent of the finished wafers into the receiving wafer mixer and centrifugation in a filter centrifuge with the separation of the first outflow, washing of sugar crystals with the separation of the second outflow and unloading of crystalline white sugar. Sugar crystals spontaneously formed by the Braunschweig method and fractionated by separation to a size of 0.12-0.16 mm are used as crystallization centers.
EFFECT: method makes it possible to increase the yield and quality of crystalline white sugar.
