FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely to a method for producing a dry beverage made from apricot. Method includes preparation of the fruit followed by treatment in a microwave field at a frequency of 2,400+50 MHz for 1.0–1.5 minutes. Then fruits are brought into the drying apparatus for drying. Drying process is carried out at a temperature of 60–65 °C for 10–11 hours to a moisture content of 7–8 %. Then fruits are cooled, ground to a powdery state and packaged in a suitable container.
EFFECT: invention provides an improvement in the quality of the finished product, an increase in biologically active components, and a reduction in the duration of the technological cycle.
