FIELD: food industry.

SUBSTANCE: invention relates to food industry, in particular to creation of functional food based on symbiotic syndicates of probiotic bacteria and biologically active peptides for aftercare of oncologic patients. Method of obtaining a functional food for aftercare of oncologic patients includes obtaining of biologically active peptides from milk proteins, as well as syndicate of probiotic bacteria isolated from human gastro-intestinal tract, followed by mixing of functional food components. In this process, obtaining of biologically active peptides from milk proteins is carried out according to scheme, which includes the following steps: acceptance, quality control, preparation of raw materials, addition of phosphates, dissolution of casein, adjusting pH to 7.5, pasteurization at temperature of 74±2 °C with holding of 15–20 s to destroy microorganisms contained in casein, cooling to 37 ±2 °C, introduction of enzymatic system, including trypsin, chymotrypsin and thermolysin. Further, successive stages of extraction and purification of biologically active peptides are carried out by ultrafiltration, preparative electrophoresis and reverse phase highly efficient liquid chromatography. Then, to achieve necessary consistency of biologically active peptides, they are concentrated in vacuum evaporator device to mass fraction of dry matter from 40 to 45 %.

EFFECT: invention makes it possible to obtain a functional food for aftercare of oncologic patients, which has pronounced antineoplastic, antioxidant and immunomodulatory properties.
