SUBSTANCE: invention relates to a method for controlling a rice pressure cooker comprising casing (10) closed by a lid, wherein casing (10) comprises main heating element (17), vessel (11) placed in casing (10), heating element (18) for heating the upper edge of vessel (11), heating element (19) for heating lid (12), controlled pressure relief valve (20), first temperature sensor (15) situated near the bottom of vessel (11) and second temperature sensor (16) positioned in lid (12), comprising the following steps: soaking step (A) during which heating elements (17, 18, 19) are controlled in such a way as to maintain for a duration of between 10 and 40 min a given temperature in the range of 65 to 85°C inside the vessel (11); heating step (B) that begins at the end of the given soaking time and during which controlled pressure relief valve (20) is in the closed position, and heating elements (17, 18, 19) are controlled in such a way as to achieve a given temperature in the range of 115 to 120°C inside vessel (11); cooking step comprising first phase (C) beginning as soon as the given temperature is reached, and during which controlled pressure relief valve (20) is kept in the closed position and heating elements (17, 18, 19) are controlled in such a way as to maintain the given temperature inside vessel (11) for a given duration between 2 and 6 min.

EFFECT: object of the invention is to provide a method for controlling a pressurized rice cooker for increasing the amount of at least one of the amino acids cooked white rice.
