SUBSTANCE: invention relates to the food industry. Method for preparing a pudding mixture includes preparing the groats and additional ingredients, dosing and mixing them. As an additional ingredient, soybean-pumpkin protein-vitamin concentrate is used in an amount of 30–35 % of the groats weight. Soybean-pumpkin protein-vitamin concentrate is obtained by co-grinding the prepared soybean grain and fresh food pumpkin in water, separating the soybean-pumpkin suspension, coagulation of protein substances in it with an aqueous solution of ascorbic acid, separation of an coagulum, its formation and drying to a moisture content of not more than 10 %.

EFFECT: invention makes it possible to obtain a product with high food and biological value, improved organoleptic characteristics and improved mineral and vitamin composition.
