SUBSTANCE: present invention relates to a method for modifying one or more types of triglycerides in a fat comprising subjecting one oil or fat, selected from the group consisting of sunflower oil with a high content of stearic acid and with a high content of oleic acid or oleic fraction, soybean oil with a high content of stearic acid and with a high content of oleic acid or oleic fraction, rapeseed oil with a high content of stearic acid and oleic acid or oleic fraction, cottonseed oil with a high content of stearic acid and with a high content of oleic acid or oleic fraction, by the process of intramolecular esterification, in which the triglyceride fatty acids of said oil or fat are randomly redistributed between triglycerides to obtain an oil or fat with a modified solid fat profile (SFC), where the amount of SUS-type triglycerides (saturated-unsaturated-saturated) is elevated. In addition, the present invention relates to fats obtained and their use.
EFFECT: method of modifying one or more types of triglycerides in a fat is proposed.
